Welcome to The Hallway. Many Edmontonians may know some of the fantastic work done by the Kids in the Hall Bistro over the past 22 years. In 2017 / 2018 the program went under a revitalization, this included an extensive renovation to the physical restaurant space but also gave us the opportunity to look at the social enterprise and develop a new intentional business model that would encourage and support the development of the youth within the work experience program.

We developed a menu with a focus on scratch cooking methods where we make breakfast pastries fresh each morning, bake breads, braise meats, cook preserves, and start our soups from chicken bones and transform them into stock and on to savoury soups. We take each of these items and break them down into familiar ingredients like eggs or flour that would be common to any household.

We also focus on sustainability and food security in the design of our menus to teach the versatility of these base ingredients. We took the philosophy of sustainability in the kitchen and applied it to all aspects of our food service program; our entire lineup of food packaging, disposable coffee cups, & even our straws are made from renewable resources and are 100% compostable.

As a social enterprise we want to instill a social responsibility within the program. We have created avenues for excess product to be used at the Women’s Emergency Accommodation Centre (WEAC) as well as to other programs within the city.

Because this is a working restaurant serving the public the youth in our program get a hands-on learning opportunity within a complete kitchen setting; utilizing specialized equipment such as the forno (pizza) oven, espresso machine, point of sale systems, and the combi-therm oven. We also focus on the development of teamwork, communication, time & resource management, and customer service as important work and life skills that will stay with them for life.
